Chiseled acidity provides firm definition for this chalky Champagne, though it’s swathed on the palate by a creamy range of flavors, including passion fruit coulis, toasted almond, blood orange sorbet and lime blossom. A streak of salinity races on the finish.

Much more toasty than Les Prémices. There is an interesting tango on the palate between papaya fruit and a powerful oily spiciness, a bit like toasted papaya seeds and linseed oil. But the ripeness of the fruit through this wine is massive and all-encompassing and has the roiling substance of a storm. Olive oil and oranges. Quince and membrillo. Gripping and delicious, in an idiosyncratic way.

Falstaff (94)

Medium yellow, silver reflections, fine, well persistent mousse. Fine nuances of herbs, baking notes and a touch of roasted pineapple, a mineral touch and some walnut. Complex and taut on the palate with fine white stone fruit nuances, a finesse-rich structure and salty-mineral character. Very long lasting, fine extracted fruit with a sweet touch in the finish. Great food companion.
