Since Billy Walker took the reins at The GlenAllachie in 2005, implementing sweeping changes across the board, the distillery has been on a steady ascent. One stellar bottling follows another, each showcasing the meticulous selection of only the finest casks to ensure exceptional maturation quality. For *The Art of Drinks 2024*, Billy has once again ventured into the depths of the warehouse to select something truly special: an 11-year-old single malt matured in a ruby port hogshead. Bottled at a robust cask strength of 57.6%, its stunningly dark color is entirely natural, the result of its time spent resting in this remarkable cask.
Tasting Notes:
– Color: Deep mahogany with a subtle purple hue.
– Nose: Bursting with black cherries, mocha, and heather honey, interwoven with molasses, Turkish delight, and rich cocoa, plus a hint of baking spices.
– Palate: Luscious layers of honeycomb, plum jam, and caramelized cherries, followed by cinnamon, raisins, and hazelnut chocolate.
– Finish: Long and fruit-laden, leaving a refined, lingering sweetness.
